What is Mozzarella

Fresh buffalo mozzarella is one the finest delicacies of Italian cuisine. This soft, porcelain-white and unripened cheese is produced from the milk of water buffaloes, which live in the wet lowland swamps of Campania region, the countryside area around Naples. They were typically used for plowing in the watery terrains, both because of the strength and the size of their hooves, which do not sink too far into the moist soils. They are also known to survive in conditions where no other animal could survive, on almost any food. Physically speaking, the cheese made from water buffalo milk was a brighter white, softer, less firm, and moister.  Buffalo mozzarella must come exclusively water buffalo‘s milk, it must be produced at 35°C in less than 18 hours from the moment the milk is taken from the buffaloes, in order to guarantee the freshness. The cheese remains in a special salt whey which keeps it fresh and renders his flavor so unique till its consumption
