What is Kare-Kare?

Kare-Kare is one of the well-loved Filipino dishes because of its hearty taste that reminds Filipinos of home and exquisite barrio fiestas. Oxtail, Beef, or Tripe is cut, prepped, and simmered to tender for hours. Peanuts are roasted and manually ground to a paste to flavor the stew. Rice is toasted brown and also ground up to make the powder to thicken the peanut sauce, and Annatto seeds are steeped in water/broth to give the Kare Kare a reddish -orange color. Leafy vegetables and eggplants are stir-fried separately and served as a side, along with the shrimp paste dipping sauce to add a salty “umami” flavor to an otherwise mild-tasting savory peanut sauce.  Since the Kapampangans are known for cooking the best version of Kare-Kare, they are usually credited with the dish’s invention. However, records from the pre-colonial era also claim that the elite classes of the Moro or Bangsamoro people who came to settle here actually brought the nutty dish with them, given that Kare-Kare is also a traditional dish in Sulu and Tawi-Tawi
