Marinate the leg pushing the marinade deep into the cuts and spread all over on both sides. Refrigerate for 12-24 hours. When you are ready to cook, fry onions till they are golden brown, drain the oil and make a paste. Mix into the marinated leg of lamb. Place the leg in a wide ovenproof dish. Heat the ghee/oil – pour over the leg and sides. Cover with foil. Bake at 170 C for 3 hours, basting the leg with the marination every half an hour.
