Kimchi is considered as South Korea’s national dish. Kimchi is a traditional spicy pickled vegetable dish in Korea. While it’s usually made with cabbage, there are more than a hundred kimchi varieties, using everything from cucumbers and radishes to eggplants and pumpkin blossoms. Most Koreans eat kimchi every day, especially during special occasions, so it’s not surprising how significantly it can affect activity in local markets. In fact, families usually serve three or more varieties of kimchi at every meal, breakfast included. Limchi is traced back to a spiritual practitioner in Korea who, in an attempt to please his master, took healthy radishes and added some salt and flower petals and put them in an earthen jar for 20 days.  It’s very rich in vitamins and good bacteria. Many claims that Kimchi help deters unregulated cell growth because of the lactic acid bacteria and acetic acid produced during the fermentation process.
